It’s been a while since we had shrimp fajitas, or any Mexican food for that matter. With the holiday, we just haven’t thought of making it. This shrimp fajita recipe come together in no time and is full of flavor.
Shrimp fajitas have only three main ingredients, shrimp, onions, and mixed bell peppers with the addition of spices. The spices is where the flavor and creativity come in. You can make them mildly spicy, somewhat spicy or really spicy. The choice is yours!

As for the shrimp, using the largest shrimp you can find is suggested for your skillet fajitas. Whether you decide to take the tails off is up to you, but you may want to take them off to eliminate the step of removing the tails while eating. Not everyone wants to deal with that extra step.

- 1/2 teaspoon smoked paprika
- 1 tablespoon chopped cilantro, optional for topping
- 1-pound large shrimp peeled and deveined, tails removed if desired
